Nutrition Monday: Cranberry Feta Salad with Orange Poppy Seed Dressing Recipe

Cranberry Feta Salad with Orange Poppy Seed Dressing Recipe

Salads don’t have to be boring, you also don’t have to make the same salad over and over.  This salad recipe has a delicious homemade vinaigrette and some awesome salad toppers!

 

Orange Poppy Seed Dressing:

  • – 4 cup Olive Oil
  • -1/4 cup Canola Oil
  • -2 tsp orange zest
  • -1/4 cup fresh orange juice
  • -2 Tbsp lemon juice
  • -2 Tbsp honey
  • -2 tsp Dijon Mustard
  • -1/4 tsp salt
  • – 1 Tbsp poppy seeds

Combine all ingredients and whisk until well emulsified. Refrigerate until ready to use.

Salad:

  • -2 grilled chicken breast
  • -2 cups mixed greens
  • -1 cup arugula
  • -1/3 cup crumbled feta cheese
  • -1/3 cup toasted sliced almonds
  • -1/3 cup dried cranberries

Add all salad ingredients to large bowl.  Pour a couple tablespoons of dressing over and toss until coated evenly. Enjoy!
